Recipe: Cauliflower Mash


Cauliflower Mash

I love cauliflower but my husband hates it. Sorry, hate is a strong word. It's more like a great dislike for cauliflower. However, he does like cauliflower mash because it's almost like mashed potatoes.

Here's my recipe:

Ingredients

1 - 2 heads of Cauliflower. (1 is more than enough for my husband and I)
Olive Oil
Mrs. Dash Herb and Garlic
2 - 4 Laughing Cow Cheese Wedges. (I use the light)
Sour Cream
Skim Milk

Directions

1. Chop the cauliflower into smaller pieces.
2. On a roasting sheet, add cauliflower, a few tsp of olive oil, Mrs. Dash, salt and pepper.
3. Bake at 400 for 30 mins or until a beautiful golden brown.
4. Once cooked, add cauliflower, laughing cow cheese and sour cream (about a tbsp for every cup of cauliflower) to a food processor.
5. Slowly pour in about 1/2 cup of skim milk.
6. Season with salt and pepper.
If happy with the consistency, eat up. If you want it creamier, add more milk. If you want it chunkier, limit the milk.

I strongly suggest adjusting flavours to suit you. Add hot sauce or cumin and paprika for a different twist. For my lactose intolerant people, use vegetable stock with lactose free greek yogurt. Play with your food!
